Chicken Salad

Chicken salad is a favorite lunch item at our house. You can either use chicken or tuna with this recipe and serve with crackers. 

Ingredients:
2 large cans of chicken
mayo
3 eggs (boiled and chopped)
1 small onion (chopped)
1 cup of sandwich pickles (chopped)
Directions:
First start boiling your eggs. They will take 15 minutes to boil. Then run cold water over them and peel. Just chop them up to put in the chicken salad after you peel them.



Chop up the onion and pickle to put in also.

Now you are ready to assemble. Dump in the two cans of chicken. Then put in eggs, onions, and pickles. Give the mixture a quick stir. Next, add in 3 heaping tablespoons of mayo and mix together. 

Serve with crackers and enjoy!

BBQ Porkchops in the Crockpot

BBQ Porkchops in the slow cooker is another meal we enjoy here at our house. This same recipe can be use with Boneless Country Ribs. I have made both, and we enjoy both kinds. 


Ingredients you will need:

8 boneless porkchops (or 2 packs of boneless ribs 5 pack)

1 bottle of Sweet Baby Ray's BBQ sauce

1/2 cup of brown sugar

2 Tablespoons of Liquid Smoke

1 onion (chopped)


Directions:

Place the porkchops into the crock pot. Place the onions on top.


Then, place the brown sugar on top of the onion
Next, pour the entire bottle of BBQ sauce over the porkchops and onions. Add 2 Tablespoons of liquid smoke.

Cook on low in the crockpot for 8 hours.

I served it with cream corn, baked beans, mashed potatoes, and honey cornbread. It is one of our favorites! 😀

 Cube Steak and Gravy

This recipe is a favorite at our house. It is tested and approved! 

Ingredients you will need:

6-8 cube steaks in a pack

1 large onion (sliced)

1 can of cream of mushroom

1 can of cream of celery

1 can of beef stock (use an empty soup can)

1 package of Lipton Onion Soup mix

Canola oil

All Purpose flour

Salt, pepper, garlic powder


Directions:

Begin by preparing the cube steak to go into the crock pot. Sprinkle salt, pepper, and garlic powder lightly on each side. Then, take 2 plates covering one of them with flour. Cover the cube steaks on all sides with flour. 




Next, you will coat a frying pan with oil. Let the oil warm up for 3 minutes on medium heat. After the oil has heated up, fry the cube steaks on each side for 2 minutes to give them a brown color.




Now you are ready to place in crockpot. Begin by placing half of the sliced onions on bottom. Then, put the cube steaks in and top with the rest of the onions. Next, combine the cream of mushroom, cream of celery, and can of beef stock in a separate bowl. Use a spoon to mix it until smooth and pour over top of the cube steak in the crockpot. Sprinkle Lipton soup mix over everything.






Cook on low for 7-8 hours and Enjoy! I serve this with mashed potatoes, green beans, and biscuits.
